In summer, any excuse will do for a party or a get-together — and that usually calls for good, flavorful food, starting with a proper barbecue night. Here are two spice blends designed to coat meat before cooking (steak, ribs, rib roast).
Blend 1
Ingredients
- 3 tbsp brown sugar
- 2 tbsp paprika
- 2 tsp cumin
- 2 tsp oregano
- A tiny pinch of cayenne pepper
- 2 tbsp thyme
Preparation (10 min)
Mix the brown sugar and spices together. Store the blend in an airtight container.
Blend 2
Especially recommended for summer grilling.
Ingredients
- 1¼ cups sugar
- 1¼ cups brown sugar
- 1/2 cup salt
- 1/4 cup freshly ground black pepper
- 1/4 cup paprika
Preparation (10 min)
Combine all the ingredients in a bowl and mix. Rub the meat with this blend about 10 minutes before cooking. Store the remainder in an airtight container.
