The Best Chicken Calzone Recipe

Looking for something different for a meal with friends? This chicken calzone, filled with courgette and parmesan, makes a welcome change from the usual pizzas and quiches — one to delight your guests as a starter or a main.

Ingredients

  • 1 pizza dough or bread dough
  • 400 g chicken escalopes
  • 2 courgettes
  • 1 onion
  • 200 g grated parmesan
  • Chopped parsley
  • Olive oil
  • Salt and pepper

Method

  1. Cut the chicken escalopes into small pieces.
  2. Wash the courgettes and cut them into cubes.
  3. Peel and chop the onion.
  4. Heat 2 tablespoons of olive oil in a frying pan.
  5. Sweat the onion until it turns translucent.
  6. Add the chicken and the courgettes, the chopped parsley, salt and pepper.
  7. Cook for 15 to 25 minutes, stirring well.
  8. Take the pan off the heat.
  9. Heat the oven to 210°C.
  10. Roll the pizza dough out on a work surface and cut it into four discs of the same size.
  11. Spread the filling over the discs of dough.
  12. Scatter with grated parmesan.
  13. Fold one edge over the other and press the edges together with your fingers to seal.
  14. Put the calzones on a baking sheet lined with parchment.
  15. Bake for about 25 minutes.
  16. Serve piping hot.

The recipe takes well to a vegetarian version: replace the chicken with extra vegetables and keep the courgette, onion and parmesan.
