Equipment

  • 1 bowl, 1 whisk, 1 spatula or wooden spoon.
  • 1 oven tray, 20cm x 30cm, buttered and lined with baking paper

Steps

  • Preheat the oven to 175°
  • Beat the melted butter, the oil and the sugars together.
  • Add the eggs and the vanilla extract and beat again for about 1 min.
  • Sift the flour, the cocoa and the salt over the previous mixture and combine with the spatula. Do not overmix this batter, just enough to incorporate the dry ingredients.
  • Fold in ¾ of the chopped chocolate or chocolate chips
  • Pour into the oven dish and level the surface, then scatter the rest of the chocolate over the top.
  • Bake for 25 to 30 min for a soft, fudgy result, or up to 40 min for more thoroughly baked brownies.
  • Wait 15 to 20 min before turning out, and let the brownies come to room temperature before cutting them into squares.

Ingredients

  • 2-3 very ripe bananas (about 300g), mashed
  • 225 g gluten-free oat flakes
  • 120g peanut butter
  • 90g roughly chopped dark chocolate (or chips)

  • Then add the chocolate.
  • Shape into balls and flatten them on a baking tray.

  • In a mixing bowl, add the softened butter, the sugar and the salt, then combine with the spatula to avoid splattering. Then beat with an electric mixer until the mixture turns pale and doubles in volume.
  • Add the egg yolk, the cream and the vanilla and mix again
  • Sift the flour and the cornflour together, then fold them in gently with the spatula in 2 batches.
  • Spoon the biscuit dough into a piping bag fitted with the nozzle of your choice. Remember to double up the bag if it is thin, so that it does not tear.
  • Pipe the biscuits into rosette shapes, then bake at 170° for 15 to 18 min. The longer the baking time, the crisper the biscuits will be.

Option

If you do not have a piping bag, you can wrap the biscuit dough in cling film and chill it for 1h. Then you can roll it out between 2 sheets of baking paper to a thickness of at least 5mm. The baking time will be shorter. Keep an eye on it from 8min. The edges should be only just golden.
