Luscious strawberry barquettes, an easy recipe for the moment spring shows the tip of its nose — perfect alongside tea, or to close a meal gently.
Strawberry barquettes: the recipe
Ingredients
- 180 g softened butter
- 80 g sugar (including vanilla sugar, or 1 tsp vanilla added separately)
- 6 egg yolks
- 1/2 sachet of baking powder
- Flour, as needed
- A little strawberry flavouring (for the pink colour)
- Strawberry jam (or another kind)
- Rose water
- Ground almonds or ground peanuts
Method
- Mix the softened butter (not melted) with the sugar. Add the egg yolks and mix well.
- Add the baking powder and the flour a little at a time, until the dough is soft.
- Roll small balls, dip them in lightly beaten egg white, then coat them in ground peanuts or almonds. Press a hole in the centre with your thumb.
- Bake: as with every biscuit of this kind, they should be barely golden underneath.
- Warm the jam with the rose water, then spoon it into the hollows of the barquettes. Let them cool before eating.

- Yes, the recipe works just as well with ground almonds as with ground peanuts to coat the balls of dough.
- Why is the dough pink?
- Thanks to a little strawberry flavouring added to the dough, on top of the jam that fills the centre of the barquettes.
- What does the rose water do in the recipe?
- Warmed with the strawberry jam, it scents the heart of the barquette with a floral note typical of oriental pastry.
