Pumpkin Fries

We all know potato fries, but pumpkin fries are far less familiar — and yet they deserve far more recognition. Serve them alongside classic fries, or use them as a stand-in. Here's how to make them.

Ingredients (serves 8)

  • 1.5 kg pumpkin
  • 40 cl sunflower oil

Preparation (10 min, cooking 7 min)

  1. Heat the deep fryer to 180°C (355°F).
  2. Cut the pumpkin into slightly thick fries.
  3. Fry in a first batch for 4 minutes, remove, then fry a second time for 3 minutes, until the fries are golden and crisp.
  4. Drain, salt, and serve.
